In about 1757 people from Fairfield settled here. In October 1762, the Parishes of Greenfield, Stratfield and North Stratford petitioned to establish North Fairfield Parish. The town of Weston was set off from it in 1845 and the town was named Easton. Town vital records begin 1852.

Samuel Staples died, leaving his entire estate to establish the Staples Free Academy. A fund descended from this beginning still provides a scholarship for college students from Easton.
